Chickpea salad with dressing

Ingredients:
For Salad:
Carrot – 1/2 cup (shredded)
Tomato – 1/4 cup (chopped)
Chickpea – 1/2 cup (cooked)
Raisins– 1 tbsp
For Dressing
Olive oil – 1 tsp
Lemon juice – 1 tsp
Salt – 1 tsp
Pepper powder – 1/2 tsp
Yoghurt – 1/2 cup
Method:
To prepare the dressing, combine the ingredients in a small bowl; stir the mixture well.
To prepare salad, combine carrot, tomato and chickpeas in a large bowl.
Pour the dressing over channa mixture, tossing gently to coat.
Finally garnish with raisins and serve.
Nutritional highlights - Chickpeas are rich in protein, potassium, iron and calcium. Carrots are rich in vitamin A and fibre. Tomatoes are rich in vitamin C and vitamin A. Yoghurt provides calcium and protein. Raisins are rich in iron, calcium and potassium.
