Poha Fried Rice

Ingredients:
Thick poha- 1 cup
Garlic - 2 cloves
Ginger, grated - 1/4 tsp
Mixed veggies (onion, peas, cauliflower, carrot, capsicum)- 1cup
Oil -1 tbsp
Pepper powder -1/4 tsp
Soy sauce – 1 tsp (optional)
Salt-as needed
Spring onion greens- To garnish
Method:
Wash the poha, soak for 3-4 minutes. Drain the water completely and keep it aside
In a pan add oil, chopped garlic and ginger. (you can use ginger-garlic paste too).
Once the raw smell goes away, add the veggies and wait for it to cook well.
Do not overcook, the veggies should be crunchy.
Add salt and pepper powder as needed.
Add soya sauce and mix everything well.
Finally add the washed poha to this and give everything gentle stir
Cook on high heat for a minute. Ensure not to burn it.
Switch off the flame. Garnish with spring onion greens.
Poha fried rice is ready to serve.
Nutrition Highlights: Spring onion is rich in vitamins and minerals. Poha is a light food for the kid.
