Apple Fried Rice

Ingredients:
Basmati rice– ½ cup
Apple – ½ no.
Spring onions – 2-3 sprigs (green and white sepearted)
Bell pepper (yellow, red, green) cut length wise – ¼ cup
Ginger – 1” piece thinly sliced
Oil – 1 ½ tbsp
Soy sauce - ¾ tbsp
Pepper powder – as desired
Few raisins and cashews
Steps of preparation
Soak rice for ½ an hour and cook. Spread the rice on a plate and set aside.
Heat a wide skillet with oil, fry the nuts till golden and set it aside.
Add ginger and sauté till you get a nice aroma.
Add white part of spring onion and fry for a min or 2.
Add bell peppers and sprinkle salt. Toss and fry on a high flame till peppers are half cooked.
Add apple and sprinkle a bit of salt. Pour in the soya sauce. Boil for a min or 2.
Add the rice, spring onions, cashews, raisins and pepper powder. Mix well and fry the rice for 2 to 3 mins.
