Apple Fried Rice

  • Basmati rice– ½ cup

  • Apple – ½ no.

  • Spring onions – 2-3 sprigs (green and white sepearted)

  • Bell pepper (yellow, red, green) cut length wise – ¼ cup

  • Ginger – 1” piece thinly sliced

  • Oil – 1 ½ tbsp

  • Soy sauce - ¾ tbsp

  • Pepper powder – as desired

  • Few raisins and cashews

Steps of preparation

  1. Soak rice for ½ an hour and cook. Spread the rice on a plate and set aside.

  2. Heat a wide skillet with oil, fry the nuts till golden and set it aside.

  3. Add ginger and sauté till you get a nice aroma.

  4. Add white part of spring onion and fry for a min or 2.

  5. Add bell peppers and sprinkle salt. Toss and fry on a high flame till peppers are half cooked.

  6. Add apple and sprinkle a bit of salt. Pour in the soya sauce. Boil for a min or 2.

  7. Add the rice, spring onions, cashews, raisins and pepper powder. Mix well and fry the rice for 2 to 3 mins.
